Super easy salad that is delicious and will impress! The pomegranate seeds and satsumas make it as gorgeous as it is tasty!Ingredients
1 1/2 teaspoons white-wine vinegar or lemon juice
2 teaspoons Dijon-style mustard
2 tablespoons olive oil
touch of maple syrup for sweetness
a pinch of good salt and freshly ground pepper
1 head of torn leaf lettuce, rinsed and spun dry
2 tablespoons raw cashews, roasted, (or you can buy already roasted, but make sure they are not salted)
2 Satsuma mandarins, peeled and sectioned. Just rub off as much of the white part as you can .
a handful of Pomegranate seeds, or as many as you likeMethod
- In bowl whisk together the vinegar, the mustard, maple syrup and salt and pepper to taste and whisk in the oil, whisking until the dressing is emulsified. I use a jar, and just shake it.
- Add the leaf lettuce, and the cashews and toss the salad well. Place the Satsuma sections on top and sprinkle on the pomegranate seeds! Enjoy!
