Leaf Lettuce, Pomegranate, Satsuma and Cashew Salad (Serves 6)

Super easy salad that is delicious and will impress! The pomegranate seeds and satsumas make it as gorgeous as it is tasty!

Ingredients
1 1/2 teaspoons white-wine vinegar or lemon juice
2 teaspoons Dijon-style mustard
2 tablespoons olive oil
touch of maple syrup for sweetness
a pinch of good salt and freshly ground pepper
1 head of torn leaf lettuce, rinsed and spun dry
2 tablespoons raw cashews, roasted, (or you can buy already roasted, but make sure they are not salted)
2 Satsuma mandarins, peeled and sectioned. Just rub off as much of the white part as you can .
a handful of Pomegranate seeds, or as many as you like

Method
  1. In bowl whisk together the vinegar, the mustard, maple syrup and salt and pepper to taste and whisk in the oil, whisking until the dressing is emulsified. I use a jar, and just shake it.
  2. Add the leaf lettuce, and the cashews and toss the salad well. Place the Satsuma sections on top and sprinkle on the pomegranate seeds! Enjoy!
