Strawberry Jalapeno Salsa (Serves 4)

20 Strawberries (hulled and chopped into a very small, even dice)
1/3 Red Onion (medium, finely minced)
1 Handful of Cilantro (well rinsed and finely chopped)
1 Jalapeńo Pepper (finely minced, leave the seeds out for less heat)
1 Lime
Crackled Black Pepper (fresh)

  1. Make the salsa first so the flavors have time to marry. In a bowl, combine the strawberries, red onion, jalapeño peppers, and cilantro and toss.
  2. Add the lime juice, salt, and pepper and toss to coat.
  3. Place the bowl in the fridge until ready to serve.
