This dish could change the way you think about turnips. In this format they come out tasting similar to a radish, fresh crisp, and just a hint of spicy. The apple is the perfect sweet, crunchy counterpart and everything is mellowed out with a vinaigrette lightly sweetened with honey or maple syrupSlaw Ingredients
2 large purple top turnips
1 medium apple any variety
1/2 lemonVinaigrette Ingredients
1 Tbsp cider vinegar\r\n1 Tbsp lemon juice\r\n1 tsp dijon mustard\r\n1 Tbsp honey or maple syrup\r\n1 tsp chopped fresh thyme\r\n1/3 cup olive oil\r\nroasted pumpkin seeds\r\nsalt and pepper to tasteMethod
- Peel turnips and slice into 1/4 inch slice. Stack slices on top of each other cut as thin as you can into matchsticks. Repeat with unpeeled apple.
- Place in a large bowl, and squeeze 1/2 lemon juice over apple so they don\'t turn brown.
- Make Dressing by combining all ingredients except for the pumpkin seeds, in a small glass jar and shake until combined. Add to the salad and toss, then add the pumpkin seeds and season with salt and freshly cracked black pepper to taste
