This 10-minute recipe highlights the mild, sweet, and peppery crunch of salad turnips (like Hakurei turnips) by pairing them with tart apples, fresh herbs, and a simple citrus vinaigrette.
Ingredients1 bunch (approx. 5-6) salad turnips with their greens attached, washed and scrubbed
1 large tart apple, such as Granny Smith or Pink Lady (cored and thinly sliced)
1 tablespoon fresh parsley or chives, finely chopped
Vinaigrette3 tablespoons extra-virgin olive oil
1 ½ tablespoons lemon juice or apple cider vinegar
1 teaspoon honey or maple syrup
1 teaspoon kosher salt or other flaky salt
Freshly ground black pepper, to taste
Method- Prep the Produce: Cut off the turnip roots, give them a wash, and shave them into paper-thin coins using a mandoline or a sharp chef\'s knife. If the turnip greens are fresh and tender, chop them finely to toss into the mix, or save them for a stir-fry
- Toss: In a large serving bowl, combine the shaved turnips, apple slices, and chopped greens. Pour the vinaigrette over the top and toss gently to coat.
