Thai Cabbage Salad (Serves )

This is a wonderful salad to bring to pot lucks. You can also add some seared Ahi or grilled sliced chicken. Makes a great addition to any meal.

Salad Ingredients
1/2 head or whole Green cabbage, shredded
3 carrots grated
1 cucumber diced small
1 lg. Red pepper (diced small)
1 bunch Green Onions Chopped
1 bunch cilantro -Chopped

Dressing
1/2 cup Rice Wine Vinegar
1/2 cup Olive Oil
Few dashes of Sesame Oil
1/4 cup Soy Sauce
2 Serrano chili\'s (minced)
4-6 Garlic Cloves (minced)
2 tbls. Sugar (Raw Sugar)
1 cup Peanuts chopped

Method
  1. Toss all salad ingredients together. Make dressing in jar and store in refrigerator for up to 1 week. When ready to serve toss salad and dressing, add peanuts last.
  2. **NOTE: If doing ahead of time do not add dressing, It will get soggy. If using a little at a time leave dressing off until ready to eat.
