Firefly Fundido con Salsa Viva (Serves 2)

Cheesy, gooey, and oh so yummy, this Firefly Fundido recipe is as tasty as it is easy to prepare.

Add/sub as many ingredients as you like to match what’s already in your pantry, and top with either Firefly Salsa Viva, or Cordito to elevate this side dish to perfection.

Ingredients
1/2 cups shredded, meltable spicy cheese - such as pepper jack
1 tablespoon cornstarch
1 cup of black beans
2 tablespoons kraut brine or light beer (optional)
1 cup Firefly Kitchens Salsa Viva Kraut (Cortido Kraut tastes great too)
½ cup chopped mushrooms, broccoli, peppers or cooked chorizo (optional)

Method
  1. Heat oven to 350°F.
  2. In a bowl, toss shredded cheese with cornstarch to fully coat. Add, black beans, brine and any extras you might like. Place in a baking dish suitable for dipping. Cover dish with foil; bake 15-20 minutes, or until cheese is fully melted. Scatter Salva Viva on the top and serve immediately with cut vegetables or thick-cut tortilla chips for dipping.
