Produce Report: Great Goodness!

Hello all and Happy Monday! The first day of summer is in just a couple of days and our bins this week are the proof. This week’s produce came in looking great this morning. Everything was vibrant, fresh, and refreshing – all compliments of summer crops.

We are particularly impressed with the gorgeous red peppers this week. Take a look at that color! Grill them, sauté them, add them or eat them alone. Red peppers have a deliciously sweet and spicy flavor that not only add color to any dish, but a distinct flavor.

These peppers are also packed with vitamins A and C. Keep them cool in a plastic bag in the fridge for longer shelf life.

One of my favorite items is the kale. Kale is one of those really awesome leafy greens that can be used in countless ways. Bake them as a chip substitution. Add them to soups. Sauté them alone. Or add them to a juice for protein and fiber! Just seeing these bundles this week has me brewing up recipes!

Speaking of leafy greens, this week’s rainbow chard is another great versatile green. Eat it raw, add it to cooked meals, either way, rainbow chard is prime choice in greens. It is also very nutritious! Rainbow chard is very high in vitamins A and K, magnesium, manganese and potassium, and is a good source of iron, vitamin E, dietary fiber and copper.

Lastly, we are pleased to have these fantastic white onions again this week. A fan favorite, these onions have a wonderful mild flavor. Looking for a new way to cook them? Throw them on the grill with a little salt and pepper for the perfect BBQ side.
