Produce Spotlight: Dinosaur Kale!

Hello all and Happy Friday!

Next week’s bins are full of fall and winter favorites! We have several new items that are just that! We are especially excited for, one of my favorites, Dinosaur Kale. Kale is so great because it is so versatile. It is absolutely delicious in soups. mixed with sautéed greens, added to a salad, or thrown into a casserole. Whatever the dish may be, chop up some Dino Kale for a hearty, nutritious addition.

A little history: Kale is a form of cabbage, green or purple, in which the central leaves do not form a head. It is considered to be closer to wild cabbage than most domesticated forms. The species Brassica oleracea contains a wide array of vegetables including broccoli, cauliflower, collard greens, and brussels sprouts.

Until the end of the Middle Ages, kale was one of the most common green vegetables in all of Europe. Curly leafed varieties of cabbage already existed along with flat leafed varieties in Greece in the fourth century BC. These forms, which were referred to by the Romans as Sabellian kale, are considered to be the ancestors of modern kales. Today the leaf colors range from light green through green, dark green and violet-green to violet-brown.

Dinosaur kale – also known as Tuscan kale, Lacinato kale, black kale, or cavolo nero – is a very hearty cooking green with dark, dark green leaves and lots of earthy, nutty flavor. The leaves are so hearty that even when well cooked they retain a wonderful firm texture.

Nutritional value: Not only is dinosaur kale delicious, but it’s nutritious, as well! Kale is very high in beta carotene, vitamin K, vitamin C, lutein, and calcium. Kale, contains sulforaphane (particularly when chopped or minced), a chemical with potent anti-cancer properties.

What’s New: Along with Dinosaur Kale, we will also be having spicy sweet, fragrant parsnips to dress up your soup! Or add them to mashed or roasted potatoes! We’ll also have gold beets and baby bok choy is back! Delicata squash and crimini mushrooms are for sale this week, so stock up!
