Produce Report: Plentiful Parsnips!

Hello All and Happy Monday!

The produce looks amazing this week! We were particularly pleased to see how large the parsnips are! Just check out this photo of one with Miles! It’s so big, he can cradle it like a baby! He’s so silly!

Parsnips resemble carrots, but are paler than most carrots and have a sweeter taste, especially when cooked. The buttery, slightly spicy, sweet flavor of cooked parsnips is reminiscent of butterscotch and honey. Try out our featured recipe of the week for our favorite way to eat parsnips!

We are also very excited to have beets this week! These are special because the farmer not only picked them fresh for us, but he mixed two  different kinds of beets. The lighter pink one is called Chiogga and they are striped inside, and the other deep purple variety is called Titan.They are from Frog Song Farm on Fir Island, near Mount Vernon, Washington!
